Rice Paper Omelette


If you haven't tried cooking eggs with rice paper yet, now is your chance! Recently it feels like rice paper recipes have been popping up everywhere, and it's been a great opportunity to really explore the versatility of this ingredient. This recipe is great example of that, and it can be adapted to meet your cravings for breakfast, lunch, or dinner.


This rice paper “omelette” comes together in just a few minutes and gives you a crispy, layer underneath soft, cooked eggs. The best part? It's nutrient dense, and ideal for a postpartum meal or snack. Keep it simple and quick, or add some extras to pack in even more nutrients - the choice is yours!



Rice Paper Omelette Ingredients:


  • 2 eggs

  • 1 sheet rice paper

  • A small amount of oil

  • Salt and pepper, to taste

  • Any additional toppings or fillings you like


Instructions


  1. Crack two eggs into a small bowl and whisk until combined. Season with a little salt and pepper.


  2. Heat a small amount of oil in a skillet over medium heat. I like to add some scallions, red pepper flakes, and shredded cheese into the pan for this bottom layer as well to start when I'm making this for breakfast.


  3. Let the oil get hot and then add the rice paper, then immediately pour the whisked eggs over the paper or it will curl up.


  4. Cook on medium heat for about 2 minutes and the fold in half. You want to get both side of the rice paper (and cheese if using) crispy, so flip once more to ensure the eggs are cooked through and everything is golden brown on the outside.


Make It Your Own


Some of my favorite things to add to mine have been:


  • Sautéed greens

  • Sautéed mushrooms + onions + garlic

  • Avocado + tomato

  • Bacon + cheese

  • Fresh herbs



When I've made this for dinner this for dinner I've used an egg wash on the rice paper and added veggies and shrimp or pork, it tastes like a cross between a scallion pancake and a dumpling!


Why I Love It


I love recipes like this because they're quick, filling, and nourishing without being complicated. When you're short on time—whether you're getting yourself out the door in the morning or trying to eat something while caring for a baby—you don't always need a complicated recipe. Sometimes you just need a few good ingredients and a couple of minutes, and with this one you can change the ingredients every time so it never gets boring. Healing the postpartum body can be a delicate process, but just because you need to be gentle on yourself doesn't mean you need to skip delicious or flavorful meals!
